What Do Food Poisoning Symptoms Look Like?

Fish in the scombridae family, such as tuna, mackerel, and bonito, are the most common sources of illness. However, other fish, such as marlin, mahi-mahi, and bluefish, may also cause scombroid fish poisoning. When these types of fish are not properly packaged and refrigerated, bacteria will begin to break down the fish's flesh, creating histamines. The histamines are heat-resistant, therefore allowing the bacteria to survive when canned or cooked. In some cases, contaminated fish may not show any visual signs of spoilage, though it's not uncommon for the fish to give off a foul odor or display a "honey-combed" appearance when cooked. Sometimes people report that the fish has a peppery or metallic taste.
